You guys. It’s the last day of s’mores week. A little sad, but it was a super fun week of s’mores goodness. And who says s’mores just have to be for summer? So for today’s s’mores treat, I couldn’t decide how I wanted to serve these little guys up. I had my head set to make little s’mores brownie sandwiches, but then I though, what if they were little one pop bites? I mean, the sandwiches are basically and two bite popper any way.
These little bites of happiness are perfect for parties and buffet style potlucks. You can grab a few without anyone ever noticing. They look a little fancier and there’s no question that you about to take a bite of awesomeness. But what about the bite’s popper cousin?
These little suckers are a more down home version of the bites. You don’t have to worry about kids dropping them and the marshmallow cream cheese getting every where. They’re self contained little kick butt pop ’em in your mouth bites of happiness! Either way you can’t go wrong.
These little guys are made using the Wilton Nonstick 24-Cavity Mini Whoopie Pie Pan. If you don’t have one, you can use a mini muffin tin, or just make the brownies like regular and cut them into tiny squares. Just follow the package cooking times accordingly.

Mini S'mores Brownie Bites & Poppers
Ingredients
- 1 package brownie mix + ingredients to prepare {I used ghiradelli mix - homemade works too}
- 8 ounces cream cheese room temperature
- 1 cup marshmallow fluff
- 4 sheets graham crackers ground to fine crumbs

Preheat oven to 325 degrees F.

Prepare the brownie batter according to package directions. Portion batter into mini whoopie pie tin cups. Bake for 18 to 20 minutes until brownies are set in the center. Remove from oven, let cool for 10 minutes. Remove brownies from tins to a wire rack and cool completely. Repeat with remaining batter.

In a medium bowl, beat together cream cheese and marshmallow fluff. Transfer to a piping bag or ziploc bag. Cut off the tip of the plastic bag (or one corner of the ziploc bag), and pipe some of the cream cheese mixture onto each brownie.

If you are making poppers, sandwich two of the bites together with cream cheese in the middle, pressingly gently to stick the brownies together. Dip the cream cheese edge of the sandwich in the graham cracker crumbs. If making bites, sprinkle graham cracker crumbs over the top of the cream cheese. {see pictures}
