Peanut Butter Cookie Dough Stuffed Sandies
Are you ready for this kids? I’m having a cookie dough week with some of my amazing dessert blogger friends. Today and Wednesday you can find some freaking awesome desserts featuring cookie dough on our blogs. It’s going to be delicious and dangerous and totally take you back to licking the bowl as a kid.

For today’s recipe I’m pairing cookie dough with a cookie. I mean seriously, they already go together. It’s kind of like the whole chicken and the egg thing, only we all know cookie dough came first.

I l-o-v-e peanut butter and so do the littles. I knew I had to make some peanut butter cookie dough, and what better flavor to pair it with than a buttery cookie and pecans. That’s right kids – Peanut Butter Cookie Dough Stuffed Sandies. But since I can’t leave well enough alone I dipped these bad boys in white chocolate too. I mean if we’re going there, let’s freaking go there!
These cookies are so yummy and happy and I want to make my dad peanut butter cookies so I can eat some more dough. But don’t worry, all the cookie dough recipes I’m sharing this week are egg free and safe to eat. Not that regular cookie dough ever bothered me.

Peanut Butter Cookie Dough Stuffed Sandies
Ingredients
Method
- In a large bowl, beat together flour, salt, butter, peanut butter, sugars, milk, and vanilla until smooth and combined.
- Using a small cookie scoop, portion cookie dough onto the bottom of 10 pecan sandies cookies. {This is about the same as one heaping tablespoons of cookie dough.} Top the cookie dough with a second cookie, bottom side facing the dough. Gently press down until the cookie dough reaches the edge of the cookies. Repeat with remaining cookies.
- In a microwave safe bowl, heat white chocolate chips for 1 minute in the microwave. Stir. Heat for another minute. Stir. Continue to heat for 30 seconds at a time, stirring between each interval, until chocolate is melted and smooth.
- Dip one half of each cookie sandwich in the melted white chocolate. Place on a Sil-Pat or parchment paper lined baking sheet. Repeat with remaining cookie sandwiches. Reheat white chocolate as needed if it becomes stiff.
- Place cookie sandwiches in the fridge until white chocolate sets.
