Hello, I’m Rachel, author and creator at {i love} my disorganized life. I can’t tell you how excited I am to be here sharing with you today! First, a little about myself; I have been married to my wonderful husband, Mark, for 22 years. We have five children {ages 21, 20,18, 16 & 11} and two grand children {ages 1& 2}. I love a good dessert, but really, who doesn’t? I also enjoy baking, especially in the winter, there’s just something so rhythmic and calming about it. The summer, however, well, that’s a but of a different story. While I still love to bake and eat sweets, it’s just too hot here in Southern Arizona for that. Thank goodness for no bake treats!

 

This No Bake Peanut Butter Cheesecake has just the right amount of sweetness with a hint of peanut butter flavor. With it’s simplicity and no oven needed, you won’t even break a sweat making it.

No Bake Peanut Butter Cheesecake

Prep Time 35 minutes
Total Time 35 minutes
Servings: 8 mini cheesecakes

Ingredients
  

Crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ¼ cup melted butter
Filling:
  • 12 ounces softened cream cheese
  • ¾ cup sour cream
  • 1 cup powdered sugar
  • 2 tablespoons creamy peanut butter
  • 2 teaspoons vanilla extract
  • White chocolate chips, if desired

Method
 

For the Crust:

  • Combine all ingredients until mixed well.
  • Press into 8 mini dessert cups; set aside.

For the Filling:

  • With and Electric mixer, beat all ingredients in a large bowl until fluffy.
  • Spoon into dessert cups and chill until set {about 30 mins}.
  • Top with white chocolate chips, if desired.
