Lemon Icebox Cupcakes
Happy Wednesday everyone! I am so excited to be sending some major love and warm fuzzies to one seriously amazing lady and mama. Today a bunch of us are getting together to welcome a very special little girl to the world.

Now I have to totally disclaimer this by saying that while I know and am a fan of Lisa’s cookie butter obsession, when I went to the pantry to get my cookie butter it was gone. 🙁 Major bummer. But I took a little inspiration from Lisa’s Lemon Ginger Mojito {YUM!!} and her Lemon Cookie Cookies and whipped together these little babies.

I really can’t think of a better person to be throwing this shower for. Lisa has been through so much joy and heartbreak with her children, and she is an amazing mom (and blogger, seriously you should be reading her blog). Lisa – if I could jump out of your computer screen right now to give you a giant hug and kiss on the cheek I would. So tell Gavin to do it for me, ‘kay?

Ingredients
Method
- In a large bowl, whip together heavy whipping cream, powdered sugar, and vanilla until medium peaks form. Do not over beat. Fold in lemon zest.
- Place 6 wafer cookies on a flat plate of baking sheet bottom down. Place 1 tablespoon whipped cream in the middle of each cookie. Place a second cookie on top of the whipped cream, bottom down. Press gently to distribute the whipped cream between the cookies. Repeat to create 3 layers for each cookie stack. using an offset spatula, spread 1/2 tablespoon whipped cream on top of the last cookie on each stack. Top each stack with 3 blueberries.
- Place "cupcakes" in the fridge for at least 4 hours (to overnight). The moisture from the whipped cream will seem into the cookies and make them soft and cakey. They're kind of awesome, and light and perfect for spring!
