Simply Roasted Sweet Potatoes are one of my all time favorite dishes. They’re simple food done right and so completely delicious!
What is is about sweet potatoes? They’re just so damn good! They’re easy to make. They can be prepared a million different ways, or at least it feels that way. And they just taste awesome! As much as I love all the different ways you can serve up sweet potatoes, nothing beats a simple roasted sweet potato. Sometimes simple food done right is the answer. No marshmallows, no candied pecans, no bacon (did I really just say that?!), just the perfectly roasted bite of naturally sweet happiness. I totally ate all of these potatoes by myself. It was in two sittings, but I just couldn’t help myself. They’re wonderful!

Simply Roasted Sweet Potatoes
Ingredients
- 3 large sweet potatoes peeled and rinsed
- 1 tablespoon vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions

Preheat oven to 400 degrees F.

Cut prepared sweet potatoes into 1-inch cubes (bite sized pieces). Place potatoes into a 9-inch x 13-inch baking dish.

Drizzle potatoes with oil. Using a spoon (or your hands) toss potatoes in the oil until well coated. Sprinkle salt and pepper over the top of the potatoes. Stir the potatoes again to distribute the seasoning evenly. Spread the potatoes into an even layer in the dish.

Bake for about 40 minutes, stirring twice during bake time, or until potatoes are fork tender and edges are beginning to brown.

Remove from the oven, and serve.
