Smokey bacon pairs perfectly with sweet apples and cinnamon in MINI BACON APPLE PIES – a perfect end of summer bite!
Are you ready for the weekend? We sure are. It’s been a weird week, and tonight we have to go try and buy a new van. UGH! Hopefully everything goes smoothly. I’m a numbers girl. I don’t need to test drive anything if the numbers don’t work. To help me cope I made some Mini Bacon Apple Pies.
If you didn’t know apples and pork are best friends….friends with benefits even. I mean this Bacon, Brie, and Apple Sandwich is basically sex. It has roasted garlic butter on toasted baguettes, and OMG!
The crust it flaky, and there’s lots of it. I love the filling in a pie, but I feel like I never get enough crust, and these mini pies totally fix that! I want to smash 3 up in a bowl with a big scoop of vanilla ice cream. Yummmmm! The little boys love that they can grab a pie and run off. Summer fun kids! BBQ and potluck oh so friendly.

Mini Bacon Apple Pies
Ingredients
- 1 granny smith apple peeled, cored, and diced
- 1 1/2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/2 tablespoon unsalted butter
- 2 strips bacon cooked crispy and crumbled
- 1/2 recipe Homademade Pie Crust {or one store bought 9" pie crust dough}
Instructions

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Sil-Pat.

In small saucepan, melt butter over medium heat.

In a small bowl, mix together cinnamon and sugar. Add apples and toss to coat. Pour apples and any extra cinnamon sugar into saucepan with butter. Cook for 5 to 7 minutes, until apples have softened a bit.

While apples are cooking, roll out pie crust. Using a 2" circle or square cookie cutter, cut out as many shapes as you can - making sure to have an even number of pieces for the top and bottom of the pie. Re-roll the pie crust and cut out more small pieces until all pie crust is used.

Mix the bacon in with the apples. Spoon a heaping tablespoonful of the apple mixture on to the center of half your pie crust cut outs.

Place another pie crust piece over the filling and cover until the dough edges touch. Using a fork, press into the edges, all the way around, or each mini pie to seal the edges. Using a sharp knife, cut a small slit in the top to release steam.

Place pies on prepared baking sheet. Bake for 20 to 25 minutes, until crust begins to brown.

Remove from oven and let cool for 10 minutes.
