At our house, my Chicken Parmesan is the all time most requested recipe. I always make enough for leftovers so I can cook once and we can eat twice. This time when we had leftovers, I didn’t want to just do the same old same old reheat and eat routine. So I made pizza instead!
This spin-on-a-classic pizza is full or great Italian flavors and is sure to be a winner with your family too. You could also make a vegetarian version of this pizza by substituting Eggplant Parmesan instead of chicken. {You can leave the eggplant rounds whole since they are easier to cut and bite through than chicken.} My family LOVED this pizza. Which is no surprise considering my Chicken Parmesan is how I won my man. 🙂 I hope you enjoy this dish as much as we do. Happy eating!
