Watermelon & Avocado Bruschetta

If you follow me on Instagram you may have seen the picture below a couple weeks ago.  I never wanted to get into Instagram, but when media groups I write for wanted Instagram follower numbers it became kind of essential.  But now I like it.  I get to see the lives and behind the scenes pics of other bloggers, and I’ve found some really cool other artsy type people whose pictures I love too.  I love sharing sneek peak and “in the process” post shots, nerdy stuff when we’re out and about and sometimes even shots of my men.  SO if you want to inside track on me, WLOW, and the fam follow along.


Okay food.  Focus Julie.  I super love avocados.  You may remember the Grilled Pork Tenderloin with Avocado-Peach Salsa I made last week.  It was totally insane.  Or my sister’s Guacamole or Green Eggs and Ham.  All fabulously green and happy.  So I got to thinking, what would be a great way to mix avocado and watermelon?  They’re both perfect flavors for summer, but a marriage…hmmm.  I was going to make fish tacos with watermelon and avocado salsa, but Mike’s not really a fish taco guy.  But then I remembered this really yummy watermelon, mint, and feta salad my aunt had made years ago.  That was the answer.  I grabber some feta {I remembered it at the store this time} and came up with the perfect summer party appetizer.  These bad boys are so quick and easy to make and they taste fabulous.  The creamy avocado, the tangy cheese, the hint of acid, and the bright juicy pops of watermelon, and the buttery crunch from the cracker at the end make my tastebuds jump for joy and do a back flip.  For realsies.

Watermelon & Avocado Bruschetta

Serves: 24 Bruschettini
  • 1/3 cup seedless watermelon, finely diced
  • 1 ripe avocado, removed from peel, pitted, and finely diced
  • 3 tablespoons crumbled feta cheese
  • 1/2 teaspoon lime juice
  • Asturi Classic Bruschettini crackers {or toasted crostini brushed with a little butter}
  1. In a small bowl, gently mix together watermelon, avocado, feta, and lime juice.
  2. Place small spoonfuls of topping onto each bruschetta cracker. Serve immediately.

      I was a little nervous about eating the first one, but the juicy fruit burst form the water melon with the creamy avocado is wonderful, especially with the buttery cracker finish. I couldn’t stop eating them! And now I’m food daydreaming.
