On the weekends I like to cook breakfast since Mike is home in the morning. We had an amazing date night last night at a charity dinner Mike’s company sponsors. However we got home late; 11:00pm is late for me *sigh*. What ever happened to, “The bar just closed. Whose house are we going to now?” That’s what growing up will get you. Since it was a late night and an early morning, Mommy loves you Thing 1, I wanted to keep this morning easy. So bring on the breakfast casserole. It only takes 5 minutes to put together. Then you let it soak for 5 minutes, throw it in the oven, and go drink your coffee. Think of this as a savory bread pudding.
- 1 pound sausage, bacon or ham
- 1 loaf day old french bread, cubed
- 1 cup shredded cheddar cheese
- 6 eggs
- 2 cups milk
- ½ teaspoon onion powder
- Salt and pepper, to taste
- Preheat oven to 350 degrees F.
- If using bacon or sausage, cook meat according to package directions. Chop desired breakfast meat.
- Place cubed bread in a 13″ x 9″ casserole dish and top with breakfast meat and cheese.
- Beat eggs, milk, onion powder, salt, and pepper until combined. Pour over casserole ingredients. Let stand for 5 minutes. {You can use your hands to press the bread into the liquid to help the liquid get soaked up.}
- Bake for 35 minutes. Serve warm.
















My dad used to make something like this when we were growing up. He would put tons of meat and cheese in it which inspired my mom to call the dish, “The Heart Attack Special.” It was delicious and we only ate it once a week. Please share this on my Foodie Friday Linky.

I know what you mean about 11pm being a late night out now… I used to be able to party till the sun came up and still go to class or work the next day- but a few weeks ago we were out till 2am and I was useless the next day.
