Bacon-Wrapped Adobo Chicken and Potatoes

Ingredients

  • 6 chicken drumsticks skin removed
  • 6 slices thick-cut bacon
  • salt and pepper to taste
  • 1 onion cut into large wedges
  • 1 1/2 pounds Yukon gold potatoes quartered

Seasoning Mix:

  • 1 tablespoon dried chives
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons adobo seasoning {I finally found this at Safeway}
  • 1 1/2 teaspoons black pepper
  • 1/2 teaspoon salt or to taste

Instructions

  1. Preheat oven to 400 degrees F.
  2. Cut each piece of bacon in half and lay over the top of each drumstick. Overlap pieces so that the bacon covers the meat of the chicken; press down to help adhere bacon to chicken.
  3. Place wrapped chicken in a 9″ x 13″ baking pan, season with salt and pepper. Place onion into baking dish, be sure not to cover the bacon. Push potatoes down into the spaces between the chicken pieces and around the edge of the dish.
  4. Combine the seasoning mix ingredients and sprinkle the seasoning over the chicken and potatoes.
  5. Bake in the preheated over for 1 hour, until the bacon is cooked and the potatoes are tender. Half way through cooking, toss onions and potatoes to coat with bacon fat from pan. Before removing pan from oven, turn on the broiler and cook for 3 to 5 minutes to crisp up bacon.
