Graham Cracker S'Mores Bars

Ingredients

  • 11 tablespoons butter room temperature
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1 giant Hershey bar broken into small pieces
  • 1 1/2 sleeves graham crackers broken in half to make squares
  • 1/4 cup mini marshmallows
  • 1 giant Hershey bar broken into pre-cut rectangles

Instructions

  1. In a medium bowl, combine flour, baking soda, salt, and cinnamon; set aside.
  2. In a large bowl, cream butter and sugars together for about 1 to 2 minutes. Add eggs, one at a time, to the butter mixture, being sure to incorporate each eggs before adding the next. Add vanilla and mix to combine.
  3. Add the flour mixture to the butter mixture in two additions, mix until flour is just incorporated. By hand, fold in 1 cup mini marshmallows, chocolate chips and 1 Hershey bar, broken into small pieces. Chill mixture in the refrigerator for 10 to 15 minutes.
  4. While mixture chills, preheat oven to 375 degrees F. Prepare an 11″ x 8″ baking dish by lining it with parchment paper. Layer the bottom of the dish with graham cracker squares; break squares into half as needed to cover the entire bottom of the dish.
  5. Remove chilled dough and using a large spoon, place a large ball of dough on top of each graham cracker square. Use remaining dough to fill in gaps, it will look like A LOT of dough, but it all needs to run together to cover the graham crackers.
  6. Place baking dish in the oven for 6 minutes. Remove the pan and press the other Hershey bar – broken into rectangles – into the top of the dough and then press remaining 1/4 cup mini marshmallows into top of dough. Return to oven and bake for 7 to 9 more minutes, or until the marshmallows begin to brown and the top of the dough is set.
  7. Remove dish from oven and cool on a wire rack. Once the cookie is sufficiently cooled, about 20 minutes, place the dish in the refrigerator to set up, about another 20 minutes. Take the cookie out of the baking dish by lifting up the parchment paper. Place the cookie onto a cutting board and cut into squares.
