No Bake Peanut Butter Cheesecake

Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter

Filling:

  • 12 ounces softened cream cheese
  • 3/4 cup sour cream
  • 1 cup powdered sugar
  • 2 tablespoons creamy peanut butter
  • 2 teaspoons vanilla extract
  • White chocolate chips if desired

Instructions

For the Crust:

  1. Combine all ingredients until mixed well.
  2. Press into 8 mini dessert cups; set aside.

For the Filling:

  1. With and Electric mixer, beat all ingredients in a large bowl until fluffy.
  2. Spoon into dessert cups and chill until set {about 30 mins}.
  3. Top with white chocolate chips, if desired.
