Frankenstein & Pumpkin Rice Cereal Halloween Treats

Ingredients

  • 6 cups rice cereal
  • One 10 ounce package big marshmallows
  • 3 tablespoons unsalted butter divided
  • Green and orange food coloring
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil
  • One 12 ounce package green candy melts
  • 12 Nestle Crunch fun-size candy bars rough chopped
  • 8 Butterfinger fun-size candy bars rough chopped
  • Non-stick cooking spray

Instructions

  1. Coat a 9" x 9" baking dish with non-stick cooking spray; set aside.
  2. Melt 1 1/2 tablespoons butter in a large pot over medium heat. Reduce heat to medium-low and add 1/2 package marshmallows. Stir occasionally until marshmallows are melted and smooth. Add 1/2 teaspoon vanilla; stir. Add a little green food coloring. Stir to color marshmallows; if needed add more food coloring until desired color is reached.
  3. Remove pot from heat. Add 3 cups rice cereal. Stir until well combined and cereal is colored. Pour into prepared baking dish. Spray and little non-stick cooking spray on your hand and carefully press cereal mixture evenly into pan. Set aside and allow treats to set up for 1 hour.
  4. Repeat above steps with same ingredient measurements and orange food coloring.
  5. Once treats are set, cut each cereal block into 9 even pieces. Remove treats from pan and place on a baking sheet, treats should not be touching. Add chocolate chips and vegetable oil in a bowl. Microwave for 1 minute. Stir chocolate. Microwave for 30 second intervals, stirring after each heating, until chocolate is smooth.
  6. Place chopped candy in another bowl.
  7. Dip top of green cereal treats in chocolate, place on plate (dipped side up), and top with chopped Nestle Crunch bars. Repeat with remaining green cereal treats.
  8. Add candy melts to a bowl, microwave for 1 minute, then stir. Continue to heat candy melts at 30 seconds intervals, stirring between each heating, until candy melts are smooth.
  9. Dip tops of orange cereal treats into candy melts. {I had a little trouble with the candy melts sticking and used an offset spatula to top the cereal treats instead} Sprinkle tops of "pumpkin" treats with chopped Butterfingers.
  10. Place in fridge to set for 30 minutes before serving.
