  • 1 envelope taco seasoning
  • 1 small onion chopped
  • One 8 ounce can petite diced tomatoes with jalapeno
  • 8 ounces pepper jack shredded cheese
  • 8 ounces cheddar or Colby jack shredded cheese
  • 8 medium sized tortillas

  1. Heat oil in a large skillet over medium heat. Add onion and cook until translucent. Add the ground beef to onion and brown and drain the ground beef.

  3. Cook on low 6-8 hours or high for 4.

  1. Place equal amounts of the cheeses on each tortilla (they are supposed to be extra cheesy)
  2. Spoon equal amounts of the beef taco filling.
  3. Roll each tortilla up and wrap in paper towel and microwave 2 at a time for 1 minute.
  4. Garnish with chopped tomato and sour cream.
  5. Serve and enjoy!
