Slow Cooker Beef Taco Meximelts {Taco Bell CopyCat}
Knock Off Taco Bell Beef Taco Meximelts are cheesy and zesty beefy goodness all wrapped up in a warm soft tortilla.

ground beef

envelope taco seasoning

small onion chopped

One 8 ounce can petite diced tomatoes with jalapeno

pepper jack shredded cheese

ounces
cheddar or Colby jack shredded cheese

medium sized tortillas

Chopped tomato and sour cream
for garnish (optional)

Heat oil in a large skillet over medium heat. Add onion and cook until translucent. Add the ground beef to onion and brown and drain the ground beef.

Add the browned beef to your slow cooker. Stir in taco seasoning and can of diced tomatoes.

Cook on low 6-8 hours or high for 4.
Assembly:

Place equal amounts of the cheeses on each tortilla (they are supposed to be extra cheesy)

Spoon equal amounts of the beef taco filling.

Roll each tortilla up and wrap in paper towel and microwave 2 at a time for 1 minute.

Garnish with chopped tomato and sour cream.
