Neapolitan Pancakes

Surprise the kids with Neapolitan Pancakes – an ice cream inspired breakfast you can feel good about serving.

Ingredients

Chocolate Pancakes:

  • 1/2 cup TruMoo Chocolate Milk
  • 4 teaspoons white vinegar
  • 2/3 cups all-purpose flour
  • 4 teaspoons sugar
  • 2/3 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1/3 teaspoon salt
  • 1/2 teaspoon unsweetened cocoa powder
  • 2/3 egg **see step #3
  • 4 teaspoons melted butter

Strawberry Pancakes:

  • 1/2 cup TruMoo Strawberry Milk
  • 4 teaspoons white vinegar
  • 2/3 cups all-purpose flour
  • 4 teaspoons sugar
  • 2/3 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1/3 teaspoon salt
  • 2/3 egg **see step #3
  • 4 teaspoons melted butter
  • 1 drop red food coloring

Regular/Vanilla Pancakes:

  • 1/2 cup TruMoo Vanilla Milk or 2% milk
  • 4 teaspoons white vinegar
  • 2/3 cups all-purpose flour
  • 4 teaspoons sugar
  • 2/3 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1/3 teaspoon salt
  • 2/3 egg **see step #3
  • 4 teaspoons melted butter

Instructions

  1. Place each flavor of milk in its own small bowl. Add vinegar to the milk. Stir once, and let stand while you make the pancake mix.
  2. Mix together flour, sugar, baking powder, baking soda, and salt – each set of dry ingredients in its own separate medium sized bowl. Add cocoa powder to one bowl, this will become your chocolate pancakes.
  3. In a small bowl, beat together 2 eggs. (One beaten egg = about 1 tablespoon.) Add 2 teaspoons of beaten egg to each bowl of flavored milk. (If you’re comfortable doing it, you can eye pouring 1/3 of the eggs into each milk bowl.)
  4. Add melted butter to milk as well. Pour milk mixture into dry ingredients and stir to combine until smooth. Repeat for remaining milk flavors. Add 1 drop of red food coloring to the strawberry pancake bowl, and stir to color the batter a brighter pink.
  5. Heat a large skillet over medium heat. Pour 1/4 of each bowl of pancake batter into the skillet (about 1/4 cup), so there is a vanilla, strawberry, and chocolate pancake in the skillet. Cook for 2 – 3 minutes per side, until bubbles begin to form, flipping once.
  6. Stack pancakes with chocolate on the bottom, vanilla/regular in the middle, and strawberry on top – just like Neapolitan ice cream. Serve warm.
