Simply Roasted Sweet Potatoes

Simply Roasted Sweet Potatoes are one of my all time favorite dishes. They're simple food done right and so completely delicious!

  • 3 large sweet potatoes peeled and rinsed
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 400 degrees F.
  2. Cut prepared sweet potatoes into 1-inch cubes (bite sized pieces). Place potatoes into a 9-inch x 13-inch baking dish.
  3. Drizzle potatoes with oil. Using a spoon (or your hands) toss potatoes in the oil until well coated. Sprinkle salt and pepper over the top of the potatoes. Stir the potatoes again to distribute the seasoning evenly. Spread the potatoes into an even layer in the dish.
  4. Bake for about 40 minutes, stirring twice during bake time, or until potatoes are fork tender and edges are beginning to brown.
  5. Remove from the oven, and serve.
