Spin Dip Pasta

Ingredients

  • 16 ounces medium shells or other short pasta
  • 1/2 teaspoon onion powder
  • 1 teaspoon crushed garlic
  • 1 cup sour cream
  • 6 ounces cream cheese room temperature
  • 3/4 cup Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 10 ounces spinach thawed and squeezed to drain excess moisture.
  • 13.5 ounce can artichoke hearts drained, rinsed, and chopped
  • 1 cup mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425 degrees F.
  2. Cook pasta al dente. Reserve 1/4 cup pasta water and drain pasta; set aside.
  3. In a large bowl, combine sour cream, cream cheese, Parmesan, lemon juice, lemon zest, onion powder and garlic. Mix to combine. Add pasta a mix to coat pasta.
  4. Stir in spinach, artichokes, pasta water, salt, pepper, and 1/2 cup mozzarella.
  5. Place mixture into a greased 9″ x 13″ baking dish and top with remaining mozzarella.
  6. Bake for 15 to 18 minutes until top is golden brown.
