Easy Summer Fruit Pizza

Ingredients

  • 1 recipe Skinny Sugar Cookies
  • 4 ounces cream cheese room temperature
  • 1/4 cup marshmallow fluff
  • 1/4 teaspoon vanila
  • 1 pear cored and slice into thin pieces
  • 10 to 15 green seedless grapes cut in half vertically
  • 5 to 10 blueberries
  • 2 tablespoons blackberry jam
  • Zest of 1 lemon and 1 lime

Instructions

  1. Prepare cookie dough according to recipe. Line a pie plate with parchment paper. Press cookie dough evenly into pie plate. Bake for 15 to 18 minutes, until edges begin to brown. Remove from oven; cool on a wire rack.
  2. In a medium bowl, beat together cream cheese, marshmallow fluff, and vanilla. Spread over cooled cookie.
  3. Place pear piece around the cookie in a circular shape. Fill center with blueberries. Fill in outer openings with grape halves.
  4. In a small bowl, microwave jam for 20 to 30 seconds, until melted. Drizzle jam over top of pizza. Sprinkle pizza with lemon and lime zest. Serve immediately or store in the refrigerator until ready to serve.
