St. Patrick's Day Cupcakes

Fun Pot of Gold cupcakes with surprise candy coins inside!

Ingredients

  • 1 box Duncan Hines White Cake Mix
  • 1 small box White Chocolate Jello Instant Pudding Mix
  • 1 tube green gel food coloring
  • Yellow M&M Candies
  • Cream Cheese Frosting
  • Gold Sugar Sprinkles

Instructions

  1. Preheat oven to 350 degrees
  2. Prepare Cake mix as instructed on box and add the packet of unprepared jello instant pudding mix.
  3. Mix thoroughly and squeeze in the entire tube of green gel food coloring. Blend well, scraping down the sides of the bowl so it all get's green.
  4. Scoop into muffin cups and bake 15-19 minutes until a toothpick inserted comes out clean.
  5. Let cool for at least one hour.
  6. Cut a small hole in the center of each cupcake and insert 5 or 6 yellow M&M's.
  7. Using a pastry bag or zip top bag with the corner snipped swirl icing on top of cupcakes.
  8. Sprinkle with gold sugar.
