Steakhouse Potato, Sausage & Goat Cheese Skillet

Ingredients

  • One 20 ounce package Simply Potatoes Steakhouse seasoned diced potatoes
  • 2 chicken sausage links {I used spinach and feta flavored}
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 2 ounces mild goat cheese or feta if you don’t like goat cheese
  • 1 1/2 tablespoons vegetable oil

Instructions

  1. Heat oil in large skillet over medium-high heat.
  2. Add the entire package of potatoes. While potatoes begin o cook, cut sausages into slices, and then add them to the skillet. Stir potatoes and sausage.
  3. Dice bell peppers, and add to skillet. Stir to combine. Cook everything for 10 to 12 minutes at medium-high heat, stirring often, or until potatoes are heated through and sausage begins to brown.
  4. Remove the skillet from heat, and place crumbles of goat cheese all over the top of the skillet. Let the cheese sit for 2 minutes to soften. Serve warm.
