I have a confession. I used to not like goat cheese. My first real experience with it was in Washington. We were staying with my aunt for the week, and my cousin Emily was getting married. Her brother Ivan prepared us all this amazing tapas dinner one night. There were Bacon-Wrapped Scallops in Pomegranate Sauce, Vegetable Crepes, Fried Goat Cheese with Confit Onions, and more! The goat cheese he picked was gamey, like really gamey. I’m taking you just stepped onto the farm gamey. And that’s “real people” who like goat cheese like it. I’m not that person. It’s mild for me all the way. So what does this have to do with dinner?
I needed to make dinner the other night and I was completely burnt out on chicken breasts and the usually stuff I make. I was staring into the fridge blankly. Then I just started grabbing things. I had a couple chicken sausages from the other night. There were some peppers = flavor and pretty colors, goat cheese, and Simply Potatoes Steakhouse Seasoned Diced Potatoes I had gotten on sale the week before. I use Simply Potatoes for weekend breakfast hashbrowns all the time, but I wanted to try something different. And I’m so glad I did!
These potatoes rocked! They had so much flavor, paired great with the other ingredients, and I had dinner on the table in a snap. I didn’t even season this dish. Seriously. The potatoes did the work for me. This is an awesome, easy weeknight meal. If your family is a bit skiddish about goat cheese, some feta would be a great substitute or even sharp cheddar. Steakhouse Potato, Sausage & Goat Cheese Skillet
Ingredients
- One 20 ounce package Simply Potatoes Steakhouse seasoned diced potatoes
- 2 chicken sausage links {I used spinach and feta flavored}
- 1/2 red bell pepper
- 1/2 green bell pepper
- 2 ounces mild goat cheese or feta if you don’t like goat cheese
- 1 1/2 tablespoons vegetable oil
Instructions

Heat oil in large skillet over medium-high heat.

Add the entire package of potatoes. While potatoes begin o cook, cut sausages into slices, and then add them to the skillet. Stir potatoes and sausage.

Dice bell peppers, and add to skillet. Stir to combine. Cook everything for 10 to 12 minutes at medium-high heat, stirring often, or until potatoes are heated through and sausage begins to brown.

Remove the skillet from heat, and place crumbles of goat cheese all over the top of the skillet. Let the cheese sit for 2 minutes to soften. Serve warm.
