Knock Off Taco Bell Beef Taco Meximelts are cheesy and zesty beefy goodness all wrapped up in a warm soft tortilla. And they’re made in a slow cooker!
Hey there it’s Rina from I Thee Cook again. With school and after school activities back in full swing round these parts I have relied on my slow cooker quite a bit these past few months. My kids just love taco nights. Instead of the regular taco with all the fixings I decided on this copycat version. These Meximelts are a perfect and super easy weeknight meal to make. You can’t go wrong with any slow cooker meal. They are just perfect for a busy family.

Slow Cooker Beef Taco Meximelts {Taco Bell CopyCat}
Ingredients
- 1 pound ground beef
- 1 envelope taco seasoning
- 1 small onion chopped
- One 8 ounce can petite diced tomatoes with jalapeno
- 8 ounces pepper jack shredded cheese
- 8 ounces cheddar or Colby jack shredded cheese
- 8 medium sized tortillas
- Chopped tomato and sour cream for garnish (optional)
Instructions

Heat oil in a large skillet over medium heat. Add onion and cook until translucent. Add the ground beef to onion and brown and drain the ground beef.

Add the browned beef to your slow cooker. Stir in taco seasoning and can of diced tomatoes.

Cook on low 6-8 hours or high for 4.
Assembly:

Place equal amounts of the cheeses on each tortilla (they are supposed to be extra cheesy)

Spoon equal amounts of the beef taco filling.

Roll each tortilla up and wrap in paper towel and microwave 2 at a time for 1 minute.

Garnish with chopped tomato and sour cream.
