I used to hate cauliflower. It’s true. Just ewww. But I’ve learned that I kind of love it soups. It’s creamy, delicious, and reminds me of potato soup. YUM! With it finally feeling like fall in Arizona (see: doors open in the morning!) soup is definitely in order. I paired this rich and creamy cauliflower soup with one of my all time favorite ingredients – roasted garlic. I don’t think I’ll ever get enough of roasted garlic. I could put it on practically everything. I swear. This soup would actually make an amazing sauce base too, if you’re a garlic lover like me!
