I love an easy weeknight dinner.While my boys aren’t in school (yet), it’s still nice to have a dinner I can count on the whole family liking. And it doesn’t hurt if that dinner doesn’t take 3 hours to prepare or load the sink full of dishes. This One-Pot Southwest Macaroni is definitely a keeper. Yay!
I had only ever thought of Manwich as a sloppy joe sauce. I mean that’s what it’s all about…right? {Are you singing the Hokey Pokey now?} But when I grabbed a can of Original flavor Manwich Sloppy Joe Sauce I saw there was a recipe idea on the side of the can – Sloppy Joe Cornbread Bake. It sounded good. But then I saw Manwich had more recipes online. I just couldn’t help myself. I clicked over to the Manwich Recipes page and got some more ideas.
The Chuckwagon Beef & Bean Skillet caught my eye. I had most of what I needed to make the dish. I started improvising with what I had on hand, and it got a little southwest on me. Go figure. I made everything in my Calphalon 5 quart saucepan.
Everything came together really easily. There were hardly any dishes, and we scarfed everything down.
I think next time I’ll try try the Manwich BOLD flavor. It’s got more attitude, and you can never get too spicy with a southwestern flavored dish. I already have so many ideas how to start mixing and matching this dish for a little variety and to find the perfect flavor combination. This time I cleaned out the pantry a little instead of going die hard “here’s the perfect recipe to embody what my brain is thinking and I’ll do any thing I can to get the right ingredients.” I’m that girl sometimes.

One-Pot Southwest Macaroni
Ingredients
- 8 ounces macaroni pasta
- 1/2 pound ground beef
- 3/4 cup Manwich Original flavor Sloppy Joe Sauce
- 1/2 can Great Northern Beans rinsed and drained
- 1/8 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon adobo seasoning
- 1/2 jalapeno pepper seeded and diced
- 1 cup shredded cheddar cheese
Instructions

In a large pot, bring water to a boil; add macaroni. Cook according to package directions. Drain; set aside.

In the same pot, brown ground beef over medium-high heat until all pink is gone. Drain grease. Add 1/2 cup Manwich sauce, beans, pepper, cayenne, garlic powder, adobo seasoning, and jalapeno. Stir until well combined. Reduce heat to medium-low and simmer for 5 to 8 minutes.

Add 1/4 cup Manwich sauce and macaroni. Stir to combine, until pasta is well coated.

Sprinkle cheese over the top of the dish. Cover pot, and turn off heat. Let sit for 2 to 3 minutes, until cheese melts. Serve warm.
