Surprise the kids with Neapolitan Pancakes – an ice cream inspired breakfast you can feel good about serving.
I don’t know if this is the boys norm, but my two littles are so particular about their flavor/color choices. Otto is always choosing chocolate food (milk, ice cream, cake) and blue colored anything (toys, shirts, yogurt), and Eddie is forever picking strawberry food (milk, ice cream, yogurt, cake, lemonade) and green colored anything. Eddie will go chocolate if strawberry isn’t available, but Otto never goes over to the pink side. For him it’s chocolate or he’d rather pass. They’re so hard core about it!
I mean it’s great that Otto like blue and Eddie likes green ’cause when you’re buying two of everything you can say that’s yours and this one is yours confidently. But the flavors thing. OMG. Some days it’s just not worth the hassle. Luckily TruMoo makes it easy to please my little flavor milk crazy monsters, and leaves me feeling good about them getting to have a special treat.
TruMoo is a low fat milk that comes in a variety of fun flavors. It give my boys 8 essential nutrients, minimal amounts of sugar (no high fructose corn syrup here kids), and is growth hormone free! They get the flavored milk they want for a special treat, and I can feel good about what I’m giving them. Win, win! You can visit TruMoo for more information about their milk.
This recipe is adapted from my Perfectly Fluffy Pancakes. It’s a lot more work portioning everything into three bowls and using 1/3 of the doubled fluffy pancake recipe for each flavor, but the boys were totally surprised and thought these pancakes where super fun. See: totally worth it!

Instructions
-
Place each flavor of milk in its own small bowl. Add vinegar to the milk. Stir once, and let stand while you make the pancake mix.
-
Mix together flour, sugar, baking powder, baking soda, and salt – each set of dry ingredients in its own separate medium sized bowl. Add cocoa powder to one bowl, this will become your chocolate pancakes.
-
In a small bowl, beat together 2 eggs. (One beaten egg = about 1 tablespoon.) Add 2 teaspoons of beaten egg to each bowl of flavored milk. (If you’re comfortable doing it, you can eye pouring 1/3 of the eggs into each milk bowl.)
-
Add melted butter to milk as well. Pour milk mixture into dry ingredients and stir to combine until smooth. Repeat for remaining milk flavors. Add 1 drop of red food coloring to the strawberry pancake bowl, and stir to color the batter a brighter pink.
-
Heat a large skillet over medium heat. Pour 1/4 of each bowl of pancake batter into the skillet (about 1/4 cup), so there is a vanilla, strawberry, and chocolate pancake in the skillet. Cook for 2 – 3 minutes per side, until bubbles begin to form, flipping once.
-
Stack pancakes with chocolate on the bottom, vanilla/regular in the middle, and strawberry on top – just like Neapolitan ice cream. Serve warm.
