One Year Ago: No-Fail Sugar Cookies & Royal Icing

Greetings, fellow foodies! I’m Sophie and I’m the little runner fueled by sugar who blogs over at My Happy Place! I’m so happy to be swapping blogs with Julie today. She is just the sweetest!
Now on my blog, you’ll find an awful lot of sugar. One of my recent favorites is my Puppy Chow Popcorn… That stuff is dannn-gerrrr-ouss! But of course, {sadly} I eat stuff other than oatmeal cookies, pretzel butterscotch blondies, and popcorn drenched in chocolate and peanut butter all the live-long day.
Breakfast is definitely my favorite meal of the day. Although most mornings I’m game for a boring bowl of cereal or if we get real fancy, scrambled eggs, I like to treat myself every once in awhile {read: pretty much every weekend.} and pancakes are usually my poison.
Today’s pancakes are secretly healthy. Of course, we have to round things out a bit by drenching them in maple syrup and whipped cream. Hey, I’m all for a balanced diet! These pancakes have some great texture thanks to the whole wheat flour and oats, and they get a little spicy from the cinnamon, ginger, and nutmeg.

Spiced Wholewheat Oatmeal Pancakes
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Ingredients
- 1 cup wholewheat flour
- 1 cup oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1 3/4 cups milk
- 2 eggs
- Butter or oil for greasing
Instructions

In a large bowl, combine the dry ingredients. Add in the milk and then the eggs. Once batter is smooth, grease a griddle or frying pan. Pour 1/3 c. of batter on the frying pan/griddle for each pancake. Repeat with the rest of the batter. Serve warm with maple syrup and whipped cream if desired.
