Do you all hear that?
It’s summer calling! Finally. Right? 😉
I don’t know about you all, but we had a rough, rough winter here. I am pretty sure my son was out about a month total due to snow days. Spring and summer seemed like a distant pipe dream around here just a month or so ago.
But finally! Spring is here, summer is on the horizon, and I am ready to break out some new summer cocktails to share with you all.
Frozen lemonades (you know, the ones you snag at the local fairs) always mean summer has arrived to me.
So, I thought why not create a fun adult version?
And I added a little coconut to the mix because I am currently obsessed with the flavor combination of coconut and lemon. 😉

Frozen Coconut Lemonade
Prep Time 3 minutes
Total Time 3 minutes
Servings 1 cocktail
Ingredients
- 1 1/2 cups crushed ice
- 1 1/2 oz coconut flavored rum
- 1 oz limoncello
- 1/4 cup coconut milk
- Lemon slices for garnishing if desired
Instructions

Add everything except the lemon slices to the blender and blend until smooth. Pour into a hurricane or martini glass. Garnish with a lemon slice, if desired.

There is just something about the frosty combination of tart lemon and creamy coconut that are going to make this drink my new go-to for the summer months. (Shhhhhh… please don’t tell that to my mojito muddler. 😉 )
