Are you ready for some pizza?!? How about dessert pizza that’s sweet, light and screams summer? I knew you would be. 🙂 Lately I’ve been a little obsessed with the combination of dark purple and lime green fruit. I put some blackberries and green grapes in Eddie’s bowl one day and I’been dreaming of a way to make those color happy together on a dish ever since. And today is the day!
Last Saturday, Mike and I packed up the kids and headed out to Smart& Final to pick up the fruit and other ingredients I would need for my recipe. I wanted to make this a healthy dessert pizza. I found a Skinny Sugar Cookie recipe {cause let’s be honest skinny isn’t’ usually my thing}, and put together some yummy toppings.
I hadn’t been to Smart & Final in years. There’s one about 2 minutes from my dad’s house, which made the trip convenient for us. The produce section was right inside the front doors. We took a little stroll around to see what all they had and to find the ingredients I was planning to use. After getting the fruit I needed, we went around the store to see if there were any other must have items, and to grab some snacky stuff for the boys.
Oh the things I had to talk myself out of. Big tubs of sprinkles, perfect food props – little dessert bowls with scalloped edges, wicker basket, serving trays like at a cafeteria. Oh oh oh!! And they had a bunch of single serving size cast iron pans too. I NEED THEM!! Unfortunately my will power {Mike} didn’t fail me and I put them on my “to get” list. We grabbed some mini pretzel dogs for the boys. Mike ended up liking them more than the boys, and had them for lunch. I got a three pound pack of butter for $6 – that’s only $2/pound. Way better than the $3/pound at the regular grocery store. Is it weird that I freak out a little when there are only two sticks of butter left in the house? I’m afraid I’ll run out. And I talked myself out of getting a box of Blow Pops. I should have gotten them. Next time.
When we got home, I got to baking. I made the Skinny Sugar Free Sugar Cookie recipe from Dashing Dish into one giant cookie. That cookie alone would have been great, but what’s a pizza without toppings. I grabbed my new favorite dark purple and lime green fruits, made a “sauce” and topped it all off.
I busted out a couple Dum-Dums while the pizza set up a little bit. I keep a lollipop stash in the house. Why do you think I was eyeing the Blow Pops? 🙂 The boys and I played and had this pizza with our lunch. I even got Otto to eat some. He said is was cake. We’ll go with it. He’d used to be so good about eating fruit and veggies, now it’s a struggle. I consider this a total win.
I’m really glad I got back into Smart & Final and found so many goodies. And I’m even more excited to have a healthy dessert option the boys all love. I’m starting, slowly but surely, to take steps to cut out as much processed food as I can in our house, and to start eating better. Mike and I need to make a dietary change for the better, and it won’t hurt the boys in the long run either.

Easy Summer Fruit Pizza
Ingredients
- 1 recipe Skinny Sugar Cookies
- 4 ounces cream cheese room temperature
- 1/4 cup marshmallow fluff
- 1/4 teaspoon vanila
- 1 pear cored and slice into thin pieces
- 10 to 15 green seedless grapes cut in half vertically
- 5 to 10 blueberries
- 2 tablespoons blackberry jam
- Zest of 1 lemon and 1 lime
Instructions

Prepare cookie dough according to recipe. Line a pie plate with parchment paper. Press cookie dough evenly into pie plate. Bake for 15 to 18 minutes, until edges begin to brown. Remove from oven; cool on a wire rack.

In a medium bowl, beat together cream cheese, marshmallow fluff, and vanilla. Spread over cooled cookie.

Place pear piece around the cookie in a circular shape. Fill center with blueberries. Fill in outer openings with grape halves.

In a small bowl, microwave jam for 20 to 30 seconds, until melted. Drizzle jam over top of pizza. Sprinkle pizza with lemon and lime zest. Serve immediately or store in the refrigerator until ready to serve.
