It’s time to put your chef coats on a get cooking in the kitchen! Okay, just kidding. You don’t need a chef’s coat. Just a skillet, microwave, and some great KRAFT products to make a totally yummy crowd pleasing dish. Three words kids…Cheddar-Shrimp Nachos. Yeah. Mike was all over these like white on rice, and I’m right there with him! These nachos are so FREAKING good!!
These nachos have tons of flavor layered into every bite. Fresh cilantro, bright bell peppers, and zesty shrimp. But we all know the real star of any plate of nachos is the cheese. I mean really, if there isn’t lots of gooey cheese they’re not nachos. Our favorite brand of cheese if KRAFT. Singles, Shredded, string cheese, it all lives in my fridge.
I was really happy to see the new KRAFT cheese section at my local Safeway. {I love their Safeway Just For You program.} It was like BAM. Get your KRAFT cheese here! And there were coupons and great recipes ideas right there next to the cheese. Talk about making dinner easy.
I grabbed a package of the Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA and some mozzarella cheese. We live on cheese around here. Otto’s lunch and dinner requests are almost always grilled cheese or quesadillas. It was nice to see KRAFT is using less packing for the same amount of cheese, but the new pouches stand up on their own. Open ’em, stand ’em up, and grab what you need. No more fighting with the bag. Love it!

Cheddar-Shrimp Nachos
Ingredients
- 1 pound raw shrimp peeled, deveined, and tails removed
- 2 tablespoons KRAFT Zesty Italian Dressing divded
- 1 red bell pepper diced
- 1 tablespoon blackened seasoning
- 6 cups of your favorite tortilla chips
- 1 – 8 ounce package KRAFT shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA
- 1 green onion whites removed and chopped
- 2 tablespoons fresh cilantro chopped
- 1 jalapeno seeds & membranes removed, then diced
- Sour cream
Instructions

Heat a large skillet over medium-high heat. Add 1 tablespoon dressing, bell pepper, and shrimp to skillet. Sprinkle shrimp with blackened seasoning. Stir to combine. Cook until shrimp is pink on one side, about 2 minutes. Flip shrimp over and cook until completely pink, 2 to 3 minutes. Stir in remaining dressing.

Spread out 1/2 of the chips on a large serving platter. Top with 1/2 the shrimp mixture and 1 cup cheese. {Spoon shrimp and peppers out of the pan, don’t pour the dressing everywhere.} Repeat layers. Microwave for 2 minutes, or until cheese is melted.

Remove from microwave. Top with jalapeno, cilantro, and green onion. Drizzle with sour cream. Serve immediately.
Recipe Notes
If you like your nachos a little spicier, don’t remove the seeds from the jalapeno. Instead, cut off the ends and cut the jalapeno into thin slices.
