Crush up Oreo cookies to a fine crumb. If you have a food processor it would probably come in handy for this.
Mix together crushed Oreos and cream cheese until well blended, scraping bowl as needed.
Roll Oreo mixture into bite sized balls using a 1/2 tablespoon scoop. Place balls onto a waxed paper lined cookie sheet.
Refrigerate for 1 hour.
Melt chocolate and shortening together over a double boiler. Stir until chocolate is smooth.
Place 1 Oreo ball onto a fork. Holding the fork over the chocolate, use a spoon to pour chocolate over the Oreo ball. Tap the base of the fork tines to knock extra chocolate back into the bowl.
Place coated Oreo ball back onto the cookie sheet. Add on sprinkles now, before the chocolate sets. Repeat with remaining balls. Refrigerate at least 1 hour to set chocolate. Keep refrigerated until ready to serve.
