Triple Bacon Burger

It’s time for some more bacon!


I know you’re hear to the food, but I have to talk for a second about one my biggest blog crushes {for the millionth time} – Spoon Fork Bacon.  These ladies have their food on lock down.  I made their Coxinha {from their book Tiny Food Party} for Otto’s birthday and everyone flipped for them.  When I saw this Boozy Bacon Jam post my mouth watered and I knew I would some day need this jam.  Today is the day.  I used SFB’s recipe, using peach bourbon because bacon & peaches are friends.  There no words for this jam.  The flavors are complex and just layered on each other over and over again.  It’s a mouth-gasm.  No joke.

And what goes better this bacon than more bacon?!?  I wanted to put some bacon in the burger itself, but was worried about the texture and everything cooking through.  On to Plan B.  I made a sort of bacon patty by cutting 2 strips of bacon in half and making a criss cross pattern before frying it.  Bacon in every bite.

I didn’t want just plain old mayonnaise for this burger.  That just wouldn’t do.  I was still missing a third bacon element to make this a “triple” bacon burger.  Besides, I needed a little creaminess to balance out the bite from the bacon jam (it’s has a fabulous bite!).  So this little number got all dressed up with some Bacon Garlic Aioli too.  It’s seriously THE BEST burger I’ve ever had, and I love me some burgers.  Please please please!  Go make this burger as soon as you can!

Serves: 4
  • 8 slices of bacon, cut in half
  • 1 pound ground beef
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 4 burger buns
  • 4 slices Colby Jack cheese (or your favorite cheese)
  • 4 large pieces of lettuce, washed
  • Bacon Jam
Bacon Garlic Aioli:
  • 2 pieces bacon, finely chopped
  • ¾ cup mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  1. Mix together mayonnaise, garlic, lemon juice, salt, and pepper until well combined. Mix in bacon. Let rest in fridge while preparing burgers.
  1. Combine ground beef, onion powder, salt, and pepper. Portion ground beef into four ¼ pound pieces, and form into patties; set aside.
  2. Cook bacon until crispy in a large skillet over medium heat. Remove to a paper towel lined plate; set aside. Reserve 2 to 3 tablespoons bacon grease in skillet.
  3. Carefully place burger patties in the skillet (or cook on the grill). Cook for 3 to 4 minutes on each side - burgers will be medium to medium-well done. Remove skillet from heat. Top burgers with cheese and cover the pan to melt the cheese, about 3 minutes or so.
  1. Place a couple tablespoons of aioli on the bottom of your burger bun Using the back of your spoon spread out the aioli to coat the bun. Do the same with the Bacon Jam on the top bun. Add extra jam and aioli to your taste - you can't have too much of this jam. Top the aioli with a piece of lettuce, cheeseburger, and bacon slices. Place top bun on burger and you are in bacon burger heaven my friend! This burger would go fabulously with some skinny fries or sweet potatoes fries.
