French Onion Dip

Think I’ve made it pretty clear how much I like The Chew.  Well, now that I’m working I have to Tivo all the episodes and try to catch up the next morning.  But…but, but…I did score this awesome recipe from Clinton Kelley the other day.  
French Onion Dip | White Lights on Wednesday

Mike is a Dean’s French Onion Dip eater for life.  But after I saw Michael Symon’s and Carla Hall’s reactions to Clinton’s dip I knew I had to try it for myself.  Mike L-O-V-E-D the dip.  he said it was right up there with Dean’s.  He liked it so much he wouldn’t miss his store bought dip if made him the homemade stuff.  That’s saying a lot.  Thanks Clinton!!

French Onion Dip | White Lights on Wednesday

French Onion Dip

Serves: about 2 cups
Ingredients
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, peeled and cut in half
  • 1 teaspoon crushed garlic {or 1 to 2 cloves minced}
  • 1½ cup sour cream
  • ¾ cup mayonnaise
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Instructions
  1. Melt butter in a large skillet or medium-high heat. Add onions and sprinkle with a pinch of salt. Stir to coat onions in butter. Spread onions into an even layer. Cook until onions begin to soften and turn brown on the edges, stir occasionally, about 5 minutes. Reduce heat to medium-low and continue to cook for another 10 to 15 minutes until onions are caramelized.
  2. Add sour cream, mayonnaise, garlic, salt, and pepper to a medium bowl.
  3. Transfer onions to a food processor, and pulse until onions are roughly chopped in small pieces. Scoop out onions into bowl with other ingredients. Stir until well combined. Season with additional salt and pepper, to taste, if desired.
  4. Serve immediately, or cover and refrigerate until ready to eat.
Notes
I think this dip tastes better after being refrigerated for at least a half hour so all the flavors can really marry together, but it's still good right after mixing.

 

You have to eat it with the bag of chips next to you and the bowl of dip on your belly.  Ask Clinton.  He’ll tell you.
