Family Dinner in Under 15 Minutes!!

I know I’m a food blogger and I cook all the time {at least it feels that way} and I love food, but some nights I just want an easy answer to every mom’s favorite question, “What’s for Dinner?”  We do take out once every couple weeks or so, I’m a pizza fiend, and fast food on occasion.  But fast, homemade food seems to be the challenge.  But I learned a little trick.




I found out the Fresh & Easy down the street from my house not only carries regular groceries, but they have Ready to Cook and Kitchen To Go meal options.  I pulled up the Fresh & Easy website to see my closest store {I thought I knew which one was closest, I lucked out and there was one the opposite direction, like two miles away!}  The website was super easy to navigate and had my closest stores with hours listed right on the front page, I just scrolled down a little, and tah-dah!  With my gift card in had, I strapped the boys into the car and we went shopping.  I made sure to check my local store ads before leaving – Fresh & Easy almost always has a $5 off your $xx purchase coupon in their ad.  Love that!  $5 is $5 people.  You can grab your own Fresh & Easy $5 off $20 purchase coupon HERE.


I spent a little more than I planned on.  You have to see the bowls I got.  They’re so CUTE!  Okay, shopping.  I made out with a pretty good haul, and since I had the gift card, I splurged a little and got a couple filets.  Steak night is Mike’s favorite dinner surprise.

The bag of Caesar salad mix is big enough to use for two dinners {since it’s just Mike and me eating it}.  I found some lobster ravioli, which I look for all the time at the other store we frequent.  But I only ever see the Butoni ravis with garlic sauce that just over powers everything, in my opinion.  I totally want to deep fry them and dip them in a lemon aioli.  YUM!!  I grabbed a giant bag of tortilla chips and some roasted tomato salsa for my Grilled Pork Tenderloin recipe.




I saw these appetizer bowls with all the ready to cook foods.  I wanted that garlic shrimp, but it wasn’t going to be enough to feed us all as is.  So I grabbed some BBQ pork steam buns, and instant brown rice.  I served the shrimp over the rice and we each had a steam bun. That’s a 10 minute dinner kids.  And it was good.  The shrimp was spicy, but really good!




I knew I was working one night during the week and I wanted to feed the boys without spending an hour in the kitchen right before leaving.  So I grabbed the escalloped chicken I got ($3.99 for two large pieces), garlic & herb roasted fresh&easy ready to cook potatoes, some blueberries we had in the fridge, and the red seedless grapes I got on sale ($0.79/lb in a 3 pound tub).  I whipped up some country gravy (a quarter recipe), cooked all the food according to the package, and made a grape and blueberry fruit salad.




The chicken crisped up wonderfully in the oven and tasted great.  I’m not just saying that either.  Mike said it tasted like I could have just made it from scratch, and I agreed.  {This could be an 8-minute meal if you microwave the chicken in stead of cooking it in the oven – I’m not even kidding}  I served the gravy over the chicken for Mike {the boys had their chicken plain}, threw some potatoes on the plate, and served up the fruit salad.  {Eddie was in heaven with the fruit}  I got ready for work and dashed.  Mike said everyone ate their entire plate.  Score one for me!!

    We often forget how simple meals can be when we add fresh ingredients like grapes to the mix! This is a great post! I agree, cutest bowls ever!

      I’m a nerd over the bowls. They’re plastic and they fit in the base really snugly so I don’t have to worry about them getting knocked over. And the colors are kind of perfect for blogging. 🙂
