Okay kids.  It’s time for another round of Secret Recipe Club!!



This month my assignment was The Savvy Kitchen.  Amy specializes in Low-Carb, Low-Calorie, and Gluten-Free cooking; along with her family’s favorite dishes.  I’m really excited to have Amy’s blog as a new resource as I try to healthify our eating habits around here.  But where to begin?  French Onion Soup Stuffed Mushrooms,   Power Sunrise Smoothies, or what about Cilantro Lime Rice {you know, like at Chipotle}?

There was one thing I knew, and that was whatever recipe I picked need to have bacon, or the option for bacon.  It is Bacon Month after all.  🙂  I planned on making Amy’s Pasta with Bacon & Shrimp in a Tomato Cream Sauce.  I mean, what doesn’t sound totally delicious about all that?  But my sweet tooth kicked in and I went hunting through Amy’s recipe list again.  And there they were – Apple Crumb Squares.

Apples/applesauce and pork chops are best friends, so why not bacon too?  I couldn’t wait to make these bars and I am SO happy I did.  The bars themselves are super moist and full of happy baking spices.  I’m generally not a walnut girl, I prefer pecans, but the walnuts work wonderfully in these bars.  And the bacon?  It give the bars a little extra texture and a pop of fatty, meaty salt that’s just wonderful.  I will be adding these bars to my favorite recipes list.  The boys loved them, I loved them, Mike loved them, and so did our friend Phil.  I all I had to do was tell him I added some bacon in and he was sold.  I can’t wait to start trying some other recipes from Amy’s blog soon!

One Year Ago: Banana Bites ~ Two Ways

Serves: 16 bars
  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, melted
  • 1 cup applesauce
  • 1/2 cup walnuts, chopped
  • 4 strips bacon, cooked crispy and chopped
  1. Preheat oven to 350 degrees F. Coat a 9″ x 13″ baking dish with non-stick cooking spray.
  2. In a large bowl combine oats, flour, brown sugar, cinnamon, salt, baking soda, and nutmeg. Add melted butter and stir until crumb mixture is evenly moistened. Reserve 1 cup crumb mixture. Pour remaining crumb mixture into prepared baking dish. Firmly press crumb mixture around to form crust for bars.
  3. Bake for 15 minutes. Remove from oven.
  4. Spread applesauce evenly over crust. Sprinkle applesauce with nuts and bacon. Sprinkle with reserved crumb mixture.
  5. Bake bars for an additional 12 to 15 minutes, or util golden brown. Remove from oven; cool bars completely. Cut into bars.
**I cut the bars after cooling for about 15 minutes. They weren’t quite set so we ate them with a fork. Totally yummy. If you let them cool all the way, you can pick up the bars and hold them in your hand.
