Leprechaun Cheesecake Shooters

I love creating desserts for holidays – it’s a time for me to be creative!  And I’m just really drawn to mini desserts.  Now I’m sure everyone has heard of red velvet cake and I thought why not green.  Well, it’s not like I was the first person to come up with this idea so if you have a favorite red velvet recipe, just substitute green food coloring.  Below is the recipe I used.

Leprechaun Cheesecake Shooters
 
A mini dessert perfect for St. Patty's Day

Ingredients
  • 2½ cups flour
  • 2 tablespoons cocoa powder
  • ½ teaspoon salt
  • 1½ cups sugar
  • 1½ cups vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon white vinegar
  • 1 cup buttermilk
  • 2 tablespoons green food coloring
  • 8 ounce package soft cream cheese
  • 3 tablespoons sugar
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon mint extract
  • 8 ounces thawed cool whip
Instructions
  1. Preheat oven to 350.
  2. Grease a baking sheet (9 x13) and line with parchment paper
  3. Sift the flour, cocoa and salt together in bowl.
  4. In a large mixing bowl combine the sugar and oil mixing for 2 minutes
  5. Then add the eggs one at a time with the vanilla and mix another 2 minutes
  6. In a small bowl combine the vinegar and baking soda then add to bowl along with buttermilk and food coloring and mix for 1 minute
  7. Add dry ingredients and mix well then pour in the pan.
  8. Bake for 18-20 minutes or until toothpick comes out clean.
  9. Let cool in pan for 10 minutes then remove, take off paper and cool completely.
  10. For filling - beat the cream cheese and sugar until creamy
  11. Add the extracts then fold in the cool whip by hand.
  12. To make shooters, cut out circles of the cake to fit, then add the cream cheese mixture and top with another circle of cake.
  13. Top with additional cool whip and sprinkles if desired

Since I went the putzy way by making these mini, you could make it easy by making it into 2 round cakes and use the cheesecake filling in the middle and frost with additional cool whip.  You will have leftover cake making them mini but we’ve just been eating it plain or with some mint chip ice cream.  We tend to like our desserts here!  Hope you have a Happy St. Patty’s Day!
