Monster Sweetheart Cookies

It’s sweets for your sweetheart day coming up soon!  How do these chocolate, peanut butter, and oat cookies sound?  Perfect for both kids and adults and super easy to make. And tastier than flowers! hehe

 

Monster Sweetheart Cookies

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: About 4 dozen

Monster Sweetheart Cookies

Ingredients

  • 1 cup peanut butter
  • 1/2 cup biscoff cookie spread (or 1 1/2 cups peanut butter)
  • 1 cup packed light brown sugar
  • 1 cup sugar
  • 1 stick soft butter
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 4 1/2 cups quick oats
  • 2 teaspoons baking soda
  • 1 cup chocolate chips
  • 1 cups M&M’s

Directions

  1. Preheat oven to 350 and line cookie sheets with parchment paper
  2. Combine the peanut butter, biscoff, brown sugar, sugar and butter in a large bowl and beat until well combined.
  3. Mix in vanilla and eggs
  4. Stir in the oats and baking soda
  5. Add chocolate chips and M&MS – mix well but gently
  6. Drop 2 tablespoons of dough onto sheets and if desired, add a few M&Ms on top
  7. Bake for 10 minutes then cool for 5 minutes; transfer to wire rack to cool completely
  8. Store in airtight container
  9. Note: cookies won’t appear done after 10 minutes but they are and will set up nicely – you don’t want to overbake them

Besides making some sweets treats, do you make a special meal or go out to dinner? We’ve done a bit of each over the years.  Just depends what we are in the mood for… last year we went to Chipotles – probably not your average romantic restaurant but the food was good and it wasn’t crowded!  Not sure what we will be doing this year – maybe I’ll make a heart shaped pizza!
