Roasted Red Pepper & Sun Dried Tomato Dip

Oh my gosh you guys.  This recipe.  I made it a couple months ago.  We had gone to Minnesota for my sister-in-law’s wedding.  It was the littles’ first plane ride.  They did great.  Eddie had two 1 minute melt down, one each way, that were quickly cured with a gummy worm and Rick Astley.  Don’t ask.  :)  Mike’s sister and her (now) wife had order from a local Italian restaurant for dinner, but had asked me to make the appetizers.  Me?!?!?!!!!!  YES!!  I’d LOVE to!!!  I sent them a bunch of recipes I thought would pair well with the food.  They picked a few, and it was game on for me.

I’m not even blowing my own horn here, this dip is all anyone at the wedding talked about.  They said they could have skipped dinner and just had this dip and been happy.  How cool is that?!?  I planned to just grab some crackers or something to serve it on, but instead made some crostini.  Thin slice baguettes, drizzle with olive oil, and broil in the oven until just browned.  Easy.  If you make this, everyone you know will love you.  I had 5 different people ask me for the recipe before the dinner was even over.  Yeah.

Roasted Red Pepper & Sun Dried Tomato Dip

Ingredients
  • 16 ounces cream cheese, softened
  • 2 cups mayonnaise
  • ¼ cup finely chopped onion
  • 4 garlic cloves, minced
  • One 7 ounce jar sun-dried tomatoes, packed in oil
  • 1 cup chopped roasted red bell peppers, about 3 large peppers (store bought or home roasted)
  • 8 ounces (2 cups) shredded mozzarella cheese
  • 8 ounces (2 cups) shredded Italian cheese blend
  • 4 ounces (1 cup) shredded Parmesan cheese, divided
  • Salt and pepper
Instructions
  1. Preheat oven to 350 degrees F. Coat a 9" x 13" baking dish with non-stick cooking spray.
  2. In a large bowl, combine cream cheese, mayonnaise, onion, and garlic with a spoon until well combined. Add tomatoes, and peppers; mix to combine. Stir in mozzarella, Italian cheese blend and ¾ cup Parmesan cheese. Add salt and pepper to taste. Mix until evenly combined.
  3. Transfer dip to prepared baking dish. Top evenly with remaining Parmesan cheese. Bake for 20 to 25 minutes, until top is golden and bubbling around the edges.
  4. Serve with crostini.
