Flank Steak with Wilted Scallions and Lime-Corn Salsa

Have you ever eaten at P.F. Chang’s?  I used to about once every couple of months when I was going to ASU.  There are a location just off campus, and it was always yummy!  It was a little treat for myself to go to P.F. Chang’s.  I love going to a nicer restaurant, having a cocktail, and being waited on.  In case you didn’t know I’m a waitress for my day job.  It’s nice not being at work and not having to cook some nights.

 

Flank Steak with Wilted Scallions and Lime-Corn Salsa

 

Not only does P.F. Chang’s have their regular menu, they also just came out with a new Fall Seasonal Menu that I can’t wait to try.  I think a date night is in order ASAP!  With cocktails like their Apple Cinnamon Martini and Ginger Jalapeno Mule, Mike and I will be in hog heaven.  It’s the bartender in us, we love trying new cocktails.

I definitely need my own plate of the Crispy Korean Chicken Wings – I don’t care how cute Mike is, I’m not sharing.

Oh, I’ll probably need some Citrus Mustard Prawns and Vietnamese Noodles with Steak & Shrimp too.  And how about some Pumpkin Wontons for dessert!?!?  Are we seeing the fall theme?

I think the thing I’m most excited about is P.F. Chang’s is hosting The Goodness of Fall Contest.  Each contestant will create a unique fall dishes highlighting 3 of the seasonal ingredients from the new fall menu.  The top 5 recipes chosen will be sent the judging panel for a change to win the grand prize.

Prizes include a $50 daily P.F. Chang’s gift card winner {need that}, and the grand prize winner with win a trip for two to Napa this coming spring.  While in Napa the winner and their guest will have a two-night stay, private dinner cooked by P.F. Chang’s cofounder and head development chef.  Then P.F. Chang’s director of beverage will giving an extensive wine tasting.  {I REALLY REALLY need this!!!}

Flank Steak with Wilted Scallions and Lime-Corn Salsa

Ingredients
  • 2 pound Flank Steak
  • 1 tablespoon butter
  • ½ teaspoon ground dry mustard, divided
  • 1 teaspoon salt, divided
  • 4 scallions, white tips cut off
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper, divided
  • 1½ cup cooked and cooled corn kernels, fresh or frozen
  • 1 large jalapeno, diced
  • Zest of 1 lime
  • Juice of ½ lime
  • 1 teaspoon minced ginger
  • ¼ teaspoon Sriracha
  • Salt and pepper, to taste
Instructions
  1. Heat a cast iron skillet over medium high heat.
  2. Trim flank steak of excess fat and tough connective tissue over surface of steak. Using a paring knife, insert knife at an angle - almost all the way through the steak - to create multiple holes all over the surface of the steak. Flip the steak over and repeat cutting process on other side. Be sure to make second set of wholes parallel to first set so you don't create big holes in your steak.
  3. Rub each side of steak with ¼ teaspoon ground mustard, ½ teaspoon salt, and ¼ teaspoon pepper.
  4. Add 1 tablespoon olive oil to skillet. Place scallions in skillet. Cook 30 seconds to 1 minute per side until greens have wilted and slightly charred. Remove from skillet and set aside.
  5. Melt butter in skillet. Add flank steak. Sear steak for 2 minutes on each side until a nice brown crust forms. After steak is seared. Remove skillet from heat. Allow steak to finish cooking in skillet for 5 minutes. Remove steak from pan and allow to rest until cool enough to touch.
  6. In a medium bowl, combine corn, jalapeno, lime zest, lime juice, minced ginger, and Sriracha until well combined. Season salsa with salt and pepper to taste.
  7. Once steak is finished cooking, slice steak into thin strips at an angle. Place steak slices on a large platter. Top with salsa and then wilted scallions. Serve family style.
