Marie’s Crock Pot French Dip

I have the best friends.  Seriously.  The people I’ve held onto all these years – after high school, changing jobs, becoming a mom – they are the ones that matter and make me happier person.  While I love my boys, sometimes I just need girl time.  My friend Marie is one of my favorite people to hang out with.  She’s funny and gorgeous and can sing like no one’s business.

 

My favorite Facebook comments are always always from Marie.  ”I planned this whole weeks menu off your blog.”  I’m making this tonight!”  Having readers who like what you do is great, don’t get me wrong, but having your real life friends like what you’re dishing up too is the best.  Because they’ll tell you if it sucked.  I’m keeping my fingers crossed that won’t happen.

The other day Marie texted me about the taquitos I posted on the WLOW Facebook Page.  I gave her my tips, and she told me about her French Dip.  It was a, “Have I ever told this about this recipe I make?  It’s really good!” convo.  I hadn’t heard this one yet.  She laid out the details for me, and I was on board.  When she mentioned she cooks everything in the crock pot I knew I wanted to share her recipe for Crocktoberfest.  I asked, she said yes, and here we are!  Okay, it was more like an “of course you can share it, why do you think I mentioned it?” but still.  Love you MARIE!!!

 

This French Dip rocks!!  Mike even said so, and he’s a French Dip connoisseur.  It’s really tender and the flavors are great.  Oh, and the real reason Marie told me I had to make this recipe, it uses Guinness.  She knows I can’t say no to Guinness.  :)  But I digress.  Serve this bad boy up on your favorite French Roll with some Provolone cheese and a side of jus and you are in business.  May I also recommend some Balsamic Vinegar & Sea Salt chips to go with?  I never like vinegar and salt chips until these ones, and WOW!!  I’m hooked!

Marie’s Crock Pot French Dip

Prep Time: 5 minutes

Cook Time: 8 hours

Total Time: 8 hours, 10 minutes

Yield: 2 to 3 sandwiches

from Marie Bazinet

Ingredients

  • 1 1/2 pounds bottom round roast (or bottom round steaks)
  • 1 can beef consommé
  • 1 can french onion soup
  • 12 ounces Guinness {no substitutions}
  • 1/4 teaspoon garlic powder
  • French style sandwich rolls
  • Sliced provolone cheese

Directions

  1. Turn crock pot onto LOW setting. Add consommé, french onion soup, Guinness, and garlic powder; stir to combine. Add bottom round. Turn beef around in liquid to coat each side.
  2. Cover, and cook for 8 hours, until beef is tender.
  3. Remove beef from crock pot and reserve liquid. Thin slice beef.
  4. Cut rolls in half - if desired, lightly toast cut side of rolls. Top rolls with a heaping helping of sliced beef and provolone cheese. Serve with a side of reserved liquid and your favorite chips or fries.

Notes

Campbell's brand makes both the French Onion and Beef Consommé soups. I didn't see the consommé anywhere else at my store.
