Kicked Up BBQ Popcorn Chicken Pizza

It’s pizza time again.  I wasn’t sure if everyone would consider my previous “pizza” post a pizza, and I aim to please.  So here we are with a Kicked Up BBQ Popcorn Chicken Pizza!

I love BBQ Chicken Pizza, but hate raw onions.  I decided to take my pizza to the next level and give it some sass.  I grabbed my bourbon barrel aged barbecue sauce, courtesy of Meghan from The Tasty Fork, some jalapenos, bacon, caramelized onions, and two cheeses.

We went to Walmart to get all the goodies I was going to need.  I decided to make a special for my men on our one day off during the week together.  The boys requested Tyson Popcorn Chicken.  We used to buy the Tyson dinosaur chicken nuggets, but the Popcorn Chicken was on sale one time so I got it instead.  We’ve been hooked ever since.  There is so much more flavor and they’re already in bite sized pieces…perfect for popping.  Haha.  Get it?  I’m a nerd.  On with the post!

Totally convenient having popcorn right next to the movies.  Walmart even had presales for the Fast and Furious 6 DVD too.  But since we were doing family movie night, we let the boys pick.  You can see all about my shopping and cooking experience in my Google + album!


Once we got home from the store, I got the pizza going, made the littles some Tyson Popcorn Chicken with Arby’s curly fries, my boys’ favorite popcorn ever {a recipe from Ashton‘s upcoming cookbook!}, and I made Cherry Limeades for everyone.

But I didn’t stop there.  We had a full on movie night!  I served the boys’ food in popcorn boxes.  Everyone got their own box of popcorn.

I made a fort in the living room.  We had blankets and pillows and had a big family picnic while watching Cloudy with a Chance of Meatballs.

I may have given the boys a little popcorn and sent them off to play while I took photos.  Blogging tricks.  :)  Everyone had a great night.  It was such a great time having a fort picnic, and I don’t care how many times we watch “meatball movie” I totally love it.  The boys wanted to camp out and sleep in the fort they like it so much.  Super fun meal, and family night.  Mom win!!

Kicked Up BBQ Popcorn Chicken Pizza

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Yield: 1 pizza

  • 10 pieces Tyson Popcorn Chicken
  • Pizza dough ( homemade or store bought)
  • 4 to 5 slices of bacon, cooked crispy and crumbled
  • 1 yellow onion, sliced thin
  • 1 tablespoon butter
  • 1 jalapeno, seeded and diced
  • 2 to 3 tablespoons barbecue sauce (or more if you like)
  • 1 cup shredded Monterrey Jack cheese
  • 1/2 cup shredded cheddar cheese


  1. In a large skillet, melt butter over medium heat. Add onions and stir to coat. Cook onions until just beginning to brown. Reduce heat to medium-low and continue to cook onions, stirring occasionally, until caramelized. Set aside.
  2. Microwave popcorn chicken for 1 minutes 30 seconds, just to thaw them most of the way. Chop up chicken into small pieces.
  3. Preheat oven to 400 degrees F.
  4. Spray a large baking sheet with non-stick cooking spray and lightly flour pan. Roll out pizza dough and spread out on baking sheet.
  5. Bake dough for 8 minutes.
  6. Carefully remove pan from oven. Brush crust with barbecue sauce, leaving a 1/2" edge around the pizza. Top with chicken, bacon, onions, and jalapeno. then top with cheeses.
  7. Return pizza to oven and bake until cheese melts and crust is golden, about 3 to 5 minutes.
  8. Remove from oven. Let cool for 2 minutes, slice, and eat!

      My mom loves to comment on how I was the master at forts when I was little. I’d tack up sheets all over my bedroom, and have multiple rooms in my forts. Cleaning the kitchen was my favorite day so I could have at the dining table chairs.
