One Year Ago: Lemon-Lime Basil Shortbread Cookies
- 2 cups cooked brown rice
- 1 Granny Smith apple, diced
- 1 red bell pepper, diced
- ½ bunch green onions, chopped
- ½ cup slivered almonds
- 3 tablespoons flat leaf parsley, chopped
- ¼ cup apple cider vinegar
- Juice of 1 lemon
- 3 tablespoons vegetable oil
- Salt and pepper, to taste
- Combine all ingredients in a large mixing bowl until evenly coated. Season with salt and pepper to taste. Stir a few more times. Serve cold or at room temp.
Totally yum! Even Mike like it which is really saying a lot. He’s picking about veggies and not really into trying lots of new stuff. I even got my MIL’s seal of approval, which basically puts this dish on the “make me” list forever. Yay!
