Saltine Cracker Toffee

Let’s get all serious for a minute.  Bra shopping is hard.  Whatever happened to a bra that just fits and doesn’t make you look all weird and pre-confirmed.  I don’t need a push-up, 10-in-one, since when are they that shape?!? bra.  I just want something cute, affordable, and leave the girls looking like themselves.
 
I feel better now.  Thanks.  Five days of bra shopping and not finding one you like takes its toll on a girl.  Too make things better let’s have some chocolate and toffee!  My mom made this toffee for Christmas and I’ve been day dreaming about it.  You’ll get addicted.  Don’t say I didn’t warn you.

Saltine Cracker Toffee

Serves: A bunch of toffee
 

Ingredients
  • 1½ sleeves saltine crackers (enough to cover your baking sheet)
  • 2 sticks unsalted butter
  • 1 cup packed light brown sugar
  • 12 ounce bag semi-sweet chocolate chips

Instructions
  1. Preheat oven to 400 degrees F. Line a baking sheet (with sides) with foil. You want the foil to come up the sides a bit.
  2. Line the baking sheet with saltine crackers; breaking crackers if needed to fill in the edges.
  3. In a medium sauce pan, melt butter over medium-high heat. Add brown sugar and stir until sugar is dissolved. Bring mixture to a boil, and allow to boil for 3 minutes without stirring. Pour mixture evenly over crackers.
  4. Place crackers in oven and bake for 5 minutes. Remove from oven and immediately top with chocolate chips. Let chocolate chips sit for 2 minutes on hot crackers. Using a spatula, spread chocolate evenly over the top of the crackers.
  5. Allow toffee to cool completely (the fridge helps). Break into pieces. Best served cold – at least I think so.

    Also, I completely commiserate about the bra shopping – it's something I avoid as much as possible. Now that I'm prego I know I have to go soon b/c what I have just isn't cutting it anymore (yeah… I almost fell out of one yesterday), but I'm still putting it off as long as possible.

  4. My best friend made me some of this for Christmas this year- it was AMAZING! We gobbled it up in no time!
    I too HATE bra shopping– it's the worst! My husband refuses to go with me anymore because I get so frustrated. But the Victoria Secret semi annual sale starts soon- so hopefully I can find a style I like and just stock back up! :)
