Aunt Cindy’s Back with a really yummy sounding apple pie!
Raw Apple Pie with Cashew Cream

Ingredients
Crust:
- 2 Cups Brazil Nuts
- 2 Cups Almonds
- ⅓ tsp sea Salt
- 1 tsp Cinnamon
- 1½ cups pitted dates
Filling:
- 3-4 Apples
- 1 tsp Nutmeg
- 2 tsp Cinnamon
- ¾ cup raisins (soaked in water for 2 hours)
- 2-3 T. Fresh squeezed lemon juice
Apple Glaze:
- ½ cup Agave Nectar
- ½ apple
- ½ teaspoon cinnamon
Cashew Cream:
- 1½ cup cashews (soaked in water for 3 hours)
- 1 cup water
- ½ cup pitted dates
- 1 teaspoon vanilla extract
Instructions
Crust:
- Process until fairly fine and then press into pie plate
Filling:
- Process together til apples are chunky or use a saladucco.
Apple Glaze:
- Process in blender until smooth.
Cashew Cream:
- Process in blender until smooth-add more water if needed. Pour on top of each piece of pie.
