Raw Apple Pie with Cashew Cream

Ingredients
Crust:
  • 2 Cups Brazil Nuts
  • 2 Cups Almonds
  • ⅓ tsp sea Salt
  • 1 tsp Cinnamon
  • 1½ cups pitted dates
Filling:
  • 3-4 Apples
  • 1 tsp Nutmeg
  • 2 tsp Cinnamon
  • ¾ cup raisins (soaked in water for 2 hours)
  • 2-3 T. Fresh squeezed lemon juice
Apple Glaze:
  • ½ cup Agave Nectar
  • ½ apple
  • ½ teaspoon cinnamon
Cashew Cream:
  • 1½ cup cashews (soaked in water for 3 hours)
  • 1 cup water
  • ½ cup pitted dates
  • 1 teaspoon vanilla extract

Instructions
Crust:
  1. Process until fairly fine and then press into pie plate
Filling:
  1. Process together til apples are chunky or use a saladucco.
Apple Glaze:
  1. Process in blender until smooth.
Cashew Cream:
  1. Process in blender until smooth-add more water if needed. Pour on top of each piece of pie.
